Description: This healing Kitchari is so nourishing and easy on the stomach. It is the perfect "feel better", easy to digest meal when your body needs a break! Kitchari can be used for a simple 3-, 10- or 20 day cleanse.
Ingredients
- ½ Cup Moong Dal (split mung beans)
- ½ Cup Basmati Rice, rinsed
- ½ Cup Lentils
- 1 Tbsp. of Ghee or Coconut Oil (vegan)
- 1 tsp Ground Cumin Seeds
- 1 tsp Mustard Seeds
- 2 tsp Ground Turmeric
- 1 tsp Ground Coriander
- 1 tsp Ground Fennel Seeds
- A large 1 inch piece of ginger, grated
- 1½ Cup mix of veggies (such as daikon, zucchini and carrot, chopped small)
- 5 cups of water
- 1 tsp Sea Salt (more for more taste)
- Cilantro for garnish
Directions
- Heat the ghee or coconut oil in medium pot
- Add the cumin, coriander, fennel and mustard seeds and cook over medium heat until the spices become fragant
- Add the ginger, turmeric, rice, lentil, mixed veggies and water
- Bring this mixture to a boil then cover and simmer over low heat for about 45 minutes or until the mixture is thick and porridge like and the rice cooked
- Season with salt and serve with a handful of cilantro for garnish
